What Ingredients Do I Need to Make Charred Corn Salad?

  • Extra virgin olive oil
  • Frozen corn
  • Red bell pepper
  • Mini sweet peppers
  • Red onion
  • Sour cream
  • Mayonnaise
  • Lime juice

  • Salt and pepper

Charred Corn Salad

Servings 6 servings

Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 4 cups frozen corn
  • 3 tbsp sour cream
  • 2 tbsp mayonnaise
  • 3 tbsp lime juice
  • 1 tbsp smoked paprika
  • Salt and pepper to taste
  • 1 red bell pepper diced without the seeds
  • 3 mini sweet peppers diced without the seeds
  • ½ large red onion diced
  • ¾ cup crumbled feta cheese divided

Instructions
 

  • Heat a cast-iron skillet over medium with extra virgin olive oil
  • Cook corn on the heated skillet – for about 5 to 7 minutes. Keep an eye on the corn, you don’t want it to burn, but you also want some of the kernels to brown.
  • As the corn cooks, mix together sour cream, mayonnaise, lime juice, paprika and salt and pepper in a large bowl.
  • Add the diced peppers, followed by the cooked corn.
  • Fold in ½ cup of the feta cheese.
  • Cover in plastic and let set in the refrigerator for at least four hours.
  • When ready to serve, sprinkle remaining feta cheese.
